These are simple but yummy! They are great for when your main dish is strong. They are also a great substitue for regular baked potatoes. Kids like these too. Enjoy! Ingredients:
4 large baking potatoes |
2 tablespoons butter or 2 tablespoons margarine, melted,divided |
1/8 teaspoon paprika |
1 tablespoon minced fresh parsley |
1/2 cup grated parmesan cheese |
salt and pepper |
Directions:
1. Preheat oven to 350. 2. With a sharp knife, cut potatoes in half lengthwise. 3. Slice each half widthwise six times, but not all the way through. 4. Fan potatoes slightly. 5. Place potatoes in shallow baking dish. 6. Brush potatoes with 1 TBS butter. 7. Sprinkle with paprika, parsley, salt, pepper and cheese. 8. Bake, uncovered at 350 for 50 minutes or until tender. 9. Drizzle with the rest of the butter. |
