We came across this sandwich at a small coffee/bagel shop in Palm Springs a few years ago. We were surprised at how much we loved these and had to start making them at home. Egg salad would be good in these too. Ingredients:
2 bagels, your favorite flavor |
2 scoops chicken salad or 2 scoops tuna salad |
Directions:
1. Scoop the insides of the bagel out - I use a steak knife to sort of slice about 1/4 inch from the edge, then use a spoon and my fingers to pull the bread out. 2. Toast the hollowed out bagel. 3. Fill with your choice of salad. |
