Schwarties Hashbrown Casserole

This is another breakfast/brunch recipe from a friend who makes these for special mornings such as holidays. With all the cheese, kids should love this!
Ingredients:
2 pounds frozen hash browns
2 cans of cream of mushroom soup
1 - 500ml carton of sour cream (about 2 cups)
1/2 cup of melted butter
grated onion to task
2 cups of grated cheddar cheese (you can add up to 2 additional cups for cheesier hasbrown casserole)
parmesan cheese
Directions:
1. Thaw potatoes slightly for easier mixing
2. Spray a 9x13 baking dish with pam
3. Mix first 6 ingredients
4. Pour the mixture into the baking dish
5. Sprinkle the parmesan on top
6. Bake at 350 degrees for 1 hour or more, depending on how crunchy you want this. You can't overcook this.
7. You can mix this the day before, refrigerate it & then cook it
8. You can prepare ahead and freeze this.
9. Variation - this would be good with some sauteed chopped onion, and you could experiment with adding some herbs/spices.
