Schwarties Hash Browns - Lower Fat

A lower fat version of the Best of Bridge classic. Great for get togethers.
Ingredients:
2 lbs frozen hash brown potatoes
1 1/2 cups low-fat sour cream (not fat free)
1/2 cup skim milk
2 (10 ounce) cans reduced-fat cream of mushroom soup (284 ml)
1/2 cup butter (melted)
1/2 diced onion (medium sized)
2 cups low-fat cheddar cheese (grated)
Directions:
1. Thaw potatoes slightly.
2. Add onion to melted butter and cook slowly until soft. Cool slightly.
3. Mix sour cream, mushroom soup, and milk in a large bowl.
4. Add butter and onion and mix well.
5. Mix in cheese.
6. Spray a 9 x 13 baking dish.
7. Bake at 350F for about 1 hour until bubbling and golden on top.
