Schools Out Sweet Potato And Sausage Soup |

This soup is hearty and quite unique, filled with ingredients you'd never think to mix together. All of the ingredients make it a healthy, hearty soup perfect for the summertime. From the Southern Living's Best Recipes Made Lighter cookbook. Ingredients:
1/2 pound reduced-fat smoked sausage, cut into 1/2 inch slices |
1 medium size sweet potato, peeled and cut into 1/2 inch cubes |
1 cup coarsely shredded cabbage |
1/2 cup chopped green bell pepper |
1/2 cup chopped celery |
1/2 cup chopped onion |
1 (16 oz) can no-salt-added tomatoes, undrained and chopped |
1 (15.8 oz) can crowder peas, undrained |
1 (14 1/4 oz) can no-salt-added beef broth |
1/4 tsp. hot sauce |
Directions:
1. Combine all ingredients in a large Dutch oven; bring to a boil over medium-high heat. 2. Cover; reduce heat, and simmer 30 minutes or until sweet potato is tender, stirring occasionally. 3. ENJOY! |
