SCD Legal Spinach Stuffed Chicken Breast. From SCD Ingredients:
6 chicken breast, halved, no skin, boneless, pounded thin |
1 c almond meal |
1/2 c parmesean cheese, grated |
1 pinch of salt |
1 pepper to taste |
2 garlic cloves, pressed |
1 tbsp oregano |
1 pinch cayenne pepper |
1/2 c almond meal |
1/2 c spinach, chopped |
1/2 c swiss cheese, grated |
1 egg |
Directions:
1. Breading Mixture - Mix the breading ingredients in a bowl 2. Stuffing Mixture - Mix 1/2 c almond flour, spinach and cheese w/ egg in another bowl 3. Dust chicken breast w/ breading mixture covering both sides of the chicken. 4. Put two heaping spoons full of stuffing mixture and roll up into the breast and secure with three toothpicks 5. Add a little olive oil to bottom of casserole dish and place rolls into dish 6. Cook at 350 F for 30-35 minutes 7. Serve with your favorite vegetable and salad |
