This is a gluten free recipe from Raman Prasad's 'Recipes for the Specific Carbohydrate Diet.' Ingredients:
140 g butter |
1/2 cup yogurt |
4 eggs |
2 teaspoons vanilla extract |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
2/3 cup honey |
1/2 cup sultana |
1/2 cup frozen raspberries |
4 cups almond meal |
Directions:
1. Heat oven to 180 C (350 F). 2. Using a hand held blender, thoroughly mix together all ingredients other than fruit. 3. Gently fold in fruit. 4. Drop batter into muffin cases. Bake for 15 minutes. When done the edges will be a little brown and the knife inserted into them will come out clean. |
