2 broccoli, chopped into small pieces |
1 onion, chopped |
1 tablespoon olive oil |
1 cup yogurt |
1/2 teaspoon salt |
1/4 teaspoon parsley |
8 eggs |
1/2 cup parmesan cheese, grated |
4 slices bacon, cooked and crumbled |
Directions:
1. Cook onion in oil, add salt, and parsley. 2. Cook broccoli. 3. Stir 1/4 of yogurt into beaten eggs; then add balance of yogurt, stirring continuously. Add parmesan cheese. 4. Add vegetables and then egg mix to quiche dish, sprinkle with bacon. 5. Bake at 180 C (350 F) for about 30 minutes. |
