This is a Gluten Free recipe from Raman Prasad's 'Recipes for the Specific Carbohydrate Diet.' We found it a bit too salty so I have cut back on the salt significantly. Ingredients:
4 cups almond meal |
2 teaspoons baking soda |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
120 g cheddar cheese, grated |
6 eggs |
80 g butter, melted |
1 tablespoon dried chives |
2 tablespoons cheddar cheese, extra cheese, finely grated |
Directions:
1. Heat oven to 190 C (375 F). Grease baking tray. 2. Blend all ingredients (except the extra 2 tbsp of cheese) with a hand held blender. 3. Spread out on a greased baking tray. 4. Top with the extra 2 tbsp of grated cheddar cheese. 5. Bake until the edge browns, about 20 minutes. 6. Allow to cool and chop into squares. |
