Wilted Escarole with Raisins and Pine Nuts. The paring of sweet raisins and pine nuts softens the bite of the dressing in this unusually pretty salad. Ingredients:
2 lbs fresh escarole |
2 tblsp toasted pine nuts |
2 tblsp olive oil |
2 tblsp red wine vinegar |
1 clove garlic |
2 tblsp golden raisins |
salt and pepper to taste |
Directions:
1. Thoroughly wash escarole in cold water; tear leaves coarsely 2. Steam escarole just until wilted. about 1 to 2 minutes. 3. Removed, set aside. 4. In a large skillet, saut'e garlic in olive oil. 5. Add escarole, raisins, pine nuts, vinegar, salt and pepper; stir to mix well just to warm lightly. 6. Serve on individual salad plates. |
