Roasted red peppers and parsley dip
Ingredients:
2 red bell peppers
4 oz cottage cheese
12 oz tofu
1/2 cup chopped fresh parsley
1 clove garlic
1 teaspoon sesame oil
1/4 cup lemon juice
2 teaspoon soy sauce
1/2 teaspoon cumin
Directions:
1. Roast peppers until blackened; cool and peel.
2. Blend all ingredients in a food processor.
3. Season to taste with salt
