Roasted red peppers and parsley dip Ingredients:
2 red bell peppers |
4 oz cottage cheese |
12 oz tofu |
1/2 cup chopped fresh parsley |
1 clove garlic |
1 teaspoon sesame oil |
1/4 cup lemon juice |
2 teaspoon soy sauce |
1/2 teaspoon cumin |
Directions:
1. Roast peppers until blackened; cool and peel. 2. Blend all ingredients in a food processor. 3. Season to taste with salt |
