Scandinavian Mushroom Salad |

I haven't made this recipe for a long time but I do remember enjoying it. Taken from Scandinavian Holiday Recipes. Cooking time is chilling time. Ingredients:
1 lb fresh mushrooms, whole |
2 tablespoons onions, finely minced |
2 tablespoons fresh lemon juice |
1 tablespoon sugar |
1/2 teaspoon fresh ground pepper |
1/2 cup whipping cream |
1/4 cup sour cream |
1 teaspoon salt |
1/8 teaspoon dried mustard |
Directions:
1. Combine mushrooms, onion, lemon juice, sugar and pepper. Cover and refrigerate for between 30 mins to 4 hours. 2. Whip cream until thick, fold in sour cream, salt and mustard. Stir this into the mushroom mixture. 3. Serve. |
