1/4 cup mayonnaise |
1 -2 teaspoon curry powder |
1 tablespoon fresh lemon juice |
5 large caperberries, stemmed and finely sliced |
4 hard-boiled eggs, chopped |
kosher salt & freshly ground black pepper |
1 tablespoon fresh chives, finely chopped |
Directions:
1. In a large bowl, whisk together mayonnaise, curry powder, and lemon juice; stir in the sliced caperberries, then fold in the eggs. 2. Season with about 1/4 teaspoon salt and 1/8 teaspoon pepper, or to taste. 3. Garnish with chives. |
