Scampi is actually the Italian name for a shellfish that is similar to a large prawn of shrimp. In the United States, it is most common to use shrimp , which is then cooked in garlic, butter, white wine and herbs. In this recipe, the wine was substituted by just adding water. Ingredients:
16 ounces linguine or 16 ounces other long pasta |
1/2 cup butter |
1 lb shrimp, peeled and deveined |
2 garlic cloves, crushed |
3 tablespoons chopped fresh flat-leaf parsley |
1/2 teaspoon white pepper |
3 tablespoons lemon juice |
1/4 cup water |
Directions:
1. In a heated skillet, melt butter and sauté shrimp and garlic, for about 3 minutes or until shrimp curls and the flesh turns opaque. 2. Add parsley, white pepper, lemon juice and water. Cook for an additional 2 minutes. 3. Serve over pasta or rice. |
