A potato stuffed with shrimp, garlic, and butter and topped with Parmesan cheese Ingredients:
1 tbls. olive oil |
2 baking potatoes |
8 medium-large shrimp, peeled and deveined |
salt and pepper, to taste |
4 tbls. parmesan cheese, grated |
garlic butter |
1 tbls. olive oil |
1 small shallot, finely chopped |
1 large clove garlic, finely chopped |
1 tbls. chives, finely chopped |
1 tbls. parsley, finely chopped |
1 stick butter, softened |
salt and pepper, to taste |
Directions:
1. Preheat oven to 350 2. Wash potatoes 3. Poke holes with a fork into potato 4. Bake for about 45 minutes or until potato is tender 5. Garlic butter 6. Heat olive oil in a medium pan 7. Add shallot and garlic and saute until tender 8. Remove from the heat and cool 9. In mixing bowl, mix butter, shallot and garlic, and herbs 10. Season with salt and pepper 11. Cut warm potatoes in 1/2 12. Scoop out potato to 1/4 in. with a spoon 13. Put excess potatoes in a bowl and keep warm 14. Put shrimp in the potato boat in a layer 15. Spoon 1-1 1/2 tbls. garlic butter over shrimp 16. Add remaining butter to saved potato and mix together 17. Put over shrimp in a mound 18. Sprinkle Parmesan cheese over potato 19. Return to oven and bake until heated through and cheese makes a golden crust, about 20 minutes |
