Scallops with Fresh Pineapple |

from Ingredients:
1 tablespoon dark sesame oil |
1 lb fresh sea scallop |
2 teaspoons low sodium soy sauce |
1/8 teaspoon crushed red pepper flakes |
1 clove garlic, minced |
1 cup fresh pineapple, cubed |
1/3 cup fresh basil leaf, chopped |
1 teaspoon gingerroot, peeled and grated |
1 tablespoon water |
1 teaspoon cornstarch |
2 cups fresh basil sprigs (optional) |
Directions:
1. Heat oil in nonstick skillet over medium high heat. 2. Add scallops, soy sauce, red pepper, and garlic to skillet and cook for 4 minutes until scallops are opaque, stirring frequently. 3. Add pineapple, basil, ginger; stir well. 4. Combine water and corn starch and add to skillet. 5. Bring to boil and cook for 1 minute until thickened, stirring constantly. 6. Serve over rice, garnished with basil sprigs. |
