This sounds interesting and different. I got this from a recipe card at the grocery store. Make sure your pan is hot when you add the scallops to get a good color on them
Ingredients:
2 large red grapefruits, peeled and sectioned
1 1/2 cups cranberries
1/2 cup sugar
3/4 cup water
1 tablespoon olive oil
1 lb sea scallops
pepper
Directions:
1. For the sauce: coarsely chop grapefruit and discard the seeds. In a medium stainless steel pot combine grapefruit, cranberries, sugar and water over high heat. Bring to boiling, cook and stir until sugar dissolves and cranberries start to break down. Reduce heat and simmer 20 minutes, set aside until serving time.
2. When the sauce is nearly done, in a large nonstick skillet heat oil over medium high heat. Pat scallops dry with paper towels and season with pepper to taste. Working in batches, place scallops in pan (do not overcrowd) ; cook 2-3 minutes per side or until both side are browned. Transfer to a platter, repeat with remaining scallops. Serve with sauce.
