Scallops With Apples and Pea Pods |

From 1001 More Low Fat Recipes. A different sort of stir fry. I would serve this with ramen noodles. Ingredients:
3 small apples, thinly sliced |
1 medium onion, chopped |
1 red bell pepper, chopped |
3 ounces snow peas, trimmed |
2 tablespoons vegetable oil |
12 ounces scallops |
1/4 cup apple cider |
2 teaspoons cornstarch |
1 tablespoon soy sauce |
salt and pepper |
Directions:
1. Stir fry apples, onions, bell pepper and pea pods in 1 tablespoon oil over medium high heat until crisp-tender; about 3 minutes. Remove from pan. 2. Stir fry scallops in wok, in remaining oil until cooked and opaque, about 4 minutes. 3. Stir in combined cider, cornstarch and soy sauce and cook until mixture boils and thickens, 1-2 minutes. 4. Stir in apple mixture; heat to boiling. Season to taste with salt and pepper. |
