This recipe oringinaly called for the scallops to be baked in pastry, but I found it perfect for linguini. Ingredients:
1 tablespoon butter |
1/2 lb mushroom, quartered |
1/2 cup dry white wine |
1 tablespoon chopped shallot |
1 tablespoon chopped parsley |
3/4 lb bay scallop |
3/4 cup thick white sauce |
1/2 cup grated parmesan cheese |
12 -16 ounces cooked linguine |
1 tablespoon butter |
1 1/4 tablespoons flour |
1 1/4 cups hot milk |
1/4 cup onion, minced |
1/4 teaspoon clove |
1/4 teaspoon nutmeg |
Directions:
1. Heat butter in skillet. 2. Add mushrooms, wine, shallots, cheese and parsley. 3. Cook over medium heat for 3-4 minutes,. 4. Stir in scallops and continue cooking 2 minutes. 5. Pour in white sauce; season and cook 1 minute. 6. Serve over cooked linguini. |
