Quick and delicious. Serve with wide pasta or egg noodles. Ingredients:
1/4 cup olive oil |
1 medium onion, chopped |
1 lb bay scallop |
1/4 cup white wine |
8 ounces tomato sauce |
1 1/4 teaspoons salt |
1/8 teaspoon pepper |
2 bay leaves |
1 teaspoon oregano |
1/2 teaspoon celery seed |
2 garlic cloves |
1 teaspoon basil |
2 tablespoons parsley |
1 lb tomato, chopped |
Directions:
1. In a 1.5-2 qt casserole, combine onion and oil. 2. Cover and microwave on high 3 minutes, stirring once. 3. Add remainder and microwave 6 minutes or until scallops are tender and cooked. |
