Scalloped Sweet Spanish Onions |

Onions and Swiss cheese in a delicious cracker crumb top custard. You can prepare a day in advance and bake when convenient. Found the recipe in The Church Supper Cookook. Ingredients:
1/4 cup butter, melted |
2 tablespoons butter |
3 medium spanish onions, sliced |
1/4 cup green pepper, chopped |
2 tablespoons pimiento, chopped |
1 cup swiss cheese, grated |
1 cup cracker crumb |
2 eggs, beaten |
3/4 cup light cream |
1 teaspoon salt |
1/8 teaspoon pepper |
1 garlic clove, minced |
Directions:
1. Melt 1/4 cup butter in skillet. 2. Add the onions and green pepper and cook until tender. 3. Stir in pimiento. 4. Place half of mixture in shallow greased baking dish. Sprinkle with 1/2 cup Swiss cheese and 1/2 cup cracker crumbs. Repeat layers of cheese and onions. 5. Beat eggs with cream, salt and pepper. Add the minced garlic. 6. Pour over onions in baking dish. 7. Mix the remaining 1/2 cup cracker crumbs with remaining 2 tablespoons melted butter. Sprinkle over top of dish. 8. Bake at 325 degrees for 25 minutes or until set. Serve hot. |
