My mom makes this for Thanksgiving dinner. Its a wonderful tasty dish your family will love! Ingredients:
2 1/2 lb. sweet potatoes, peeled |
2 tbs. margarine or butter, cut into 1/2 inch cubes |
1 1/2 cup heavy cream |
1/2 cup brown sugar |
2/4 tsp. cinnamon |
1 cup. coarsley chopped walnuts |
Directions:
1. Bring potatoes to boil. Reduce heat and simmer only 15 minutes so just barely tender. 2. Drain and cool 3. Cut crosswise into 2 quart casserole into double layers. Dot with chilled butter. 4. Using wire whisk, beat cream, 1/2 of the sugar(1/4 cup) and 1/2 tsp of the cinnamon until blended. Pour over potatoes 5. Bake 15 minutes, covered with foil 6. Remove foil and sprinkle with remaining(1/4 cup) brown sugar, remaining(1/4 tsp.) cinnamon and all of the nuts. 7. Bake, uncovered, 8 to 10 minutes longer. |
