SCALLOPED POTATOES WITH JALAPENO CHILES DATED 1961 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Markinson Estate in West, Texas in 1994. Tried and true. These are one of my top 5 favorite potato recipes and one I make every chance I get. Ingredients:
1/4 cup butter divided |
3/4 cup onion finely chopped and divided |
12 potatoes peeled and thinly sliced |
1-teaspoon salt |
2 teaspoons freshly ground black pepper |
1-teaspoon ground nutmeg |
3 cups milk, divided |
4 cups freshly grated parmesan cheese |
1-1/2 cups heavy cream |
1/4 cup finely chopped jalapeno peppers |
Directions:
1. Heat butter in heavy skillet then add onion and sauté until translucent. 2. Add potatoes, salt, pepper and nutmeg then stir gently. 3. Add milk and simmer 1 minute then sprinkle with parmesan cheese. 4. Pour cream over top and sprinkle with jalapeno. 5. Place in well greased casserole dish and bake at 350 for 45 minutes. |
