This is a wonderful recipe to help you know how much to prepare for 100 hungry people. We used to make this for Church Suppers and added cubed ham for a main dish sometimes. A real nice addition to any meal for a crowd. Ingredients:
44 lbs. potatoes |
5 tbsp. salt |
21/2 gal. cream sauce |
sauce |
41/2 c. melted butter or oleo |
21/2 gal. hot milk |
6 tbsp. salt |
11/2 tbsp. pepper |
Directions:
1. Peel and slice potatoes (season with salt). 2. Arrange in layers of cream sauce in greased baking pans (alternating potatoes and sauce). 3. Bake in slow oven, 325°F, until potatoes are tender (approximately 2 hours). 4. (Onion, cheese, chives or green pepper can be added to sauce.) 5. If you wish to make this as a main dish you may add 4-8 cups of cubed ham. 6. Serves 100 |
