This rich cheesy potato dish is traditional french and has many names: Dauphin, Au Gratin or Scalloped. It goes well with simple meals like broiled chicken or turkey Ingredients:
1 garlic clove |
1 t. butter |
1 tsp melted butter |
1 tsp salt |
1/4 tsp nutmeg |
1 tsp white pepper |
4 large baking potatoes (idahos work the best) |
2 c. heavy cream |
8 oz shredded gruyere (or swiss) |
Directions:
1. Preheat oven to 400ยบ 2. Rub cut clove of garlic over a 2 qt baking dish and then brush with melted butter 3. Peel and slice potatoes to 1/4 slice 4. Bring the cream to a simmer (be very careful not to boil the cream or it will curdle) 5. Add salt, pepper, nutmeg and stir 6. Add potato slices, making sure that the cream covers the potatoes and reduce to medium low. 7. Cook until the potatoes are firm about 12 minutes 8. Arrange 1/3 of the potatoes to the baking dish with some of the cream, overlapping them 9. Sprinkle 1/3 of the cheese and repeat layering until all potatoes are in the dish. 10. Pour remaining cream over the potatoes and end with the remaining cheese and dot with butter 11. Place the baking dish on a cooking sheet 12. Bake until golden brown on top and bubbly for about 30 minutes 13. Let dish set for about 5 minutes. 14. Leftovers can be slowly microwaved but it isn't pretty, just delicious! |
