Ingredients:
1/2 cup unsalted butter, softened |
1 1/2 cups granulated sugar |
4 large eggs |
4 egg whites |
2 (20 ounce) cans unsweetened crushed canned pineapple, undrained |
1/2 cup nonfat milk |
8 cups whole grain bread, cubed |
Directions:
1. Preheat oven to 350 degrees F & coat the inside of a 13 x9 baking dish with cooking spray. 2. In a large bowl, for about 2 minutes beat together the butter & sugar until crumbly, then add eggs & egg whites, one at a time, beating well after each addition. 3. Stir in pineapple & milk, then add the bread cubes & toss to coat. 4. Transfer entire mixture to the prepared baking dish & bake, uncovered, for 50-55 minutes or until bread cubes are toasted lightly. 5. Serve warm, then cover & refrigerate leftovers. |
