My Friend went foraging in the woods with her mushroom group and I found this recipe after a google search..it's delicious Ingredients:
4 medium red potatoes, peeled and thinly sliced |
1/4 cup heavy cream |
1 lb hedgehog mushroom, sliced (including stem) |
1/4 cup chopped fresh chives |
paprika |
1/4 cup milk |
1/4 cup freshly grated parmesan cheese |
4 slices bacon, chopped |
Directions:
1. Butter a casserole dish,. 2. Place half of the sliced potatoes and the cream in it,. 3. Add the sliced hedgehogs and cover with the remaining pototaes. 4. Cover and bake in a pre heateed 170C oven for 25 minutes. 5. Add the chives, paprika, and milk. 6. Sprinkle with the chesse and bacon. 7. Return to the oven, uncovered this time,. 8. Bake at 170C for another 20 minutes. |
