A cushaw is similar to a pumpkin. I cut it in half and take out seeds, then fill cavity with a little water, cover with foil and bake at 350 degrees until tender. Ingredients:
1 medium cushaw |
2 eggs |
2 cups sugar |
2 tablespoons flour |
1 teaspoon vanilla |
1 cup margarine |
1/2 teaspoon baking powder |
nutmeg |
Directions:
1. Cut cushaw in pieces. 2. Scrape out seeds and boil until tender. 3. Remove peeling. 4. Beat cushaw with mixer. 5. Add rest of ingredients. 6. Place in baking dish and bake in 350 degrees oven until brown on top. |
