This is a perfect addition to ham or turkey. We serve it throughout the year but it's always a Thanksgiving and Easter for our family.
Ingredients:
1 egg
salt to taste
pepper to taste
1 can (15 ounce) cream-style corn
1 can (15 ounce) golden whole kernel corn (drained, but reserve 3 tablespoons liquid)
butter or margarine
1/3 cup half and half
24 to 30 soda crackers, crushed (reserve an adequate amount for topping)
Directions:
1. Preparation
2. Beat egg in a bowl with a fork until frothy.
3. Blend in seasonings, reserved liquid and corn.
4. Add chunks of butter (about 2 tablespoons), cream, and cracker crumbs; mix well.
5. Turn into a buttered 1 quart casserole.
6. Top with reserved crumbs and dot generously with butter.
7. Bake at 350 F for 30 minutes.
