This is something my Mom made throughout my growing up years. This is served along side our meatloaf dinners. And I've never had a written recipe for this, so my servings are estimated. Ingredients:
2 eggs, beaten |
1 can whole kernal corn |
1 can creamed corn |
about 20 saltine crackers |
salt/pepper |
1/4 cup milk |
topping |
20-25 saltines |
4 tbsp. butter, divided up into 1 tbsp. pieces |
Directions:
1. Preheat oven to 375 degrees. 2. In an oven safe bowl, beat eggs. 3. Add both cans of corn. 4. Crumble the crackers into corn, add desired amount of salt and pepper, and milk. 5. Stir to combine all ingredients, if it seems a little dry add some more milk. 6. For topping, crumble the crackers all over the top, covering all of the corn. 7. Place the tablespoon sized sliced butter in 4 different places of the crumbled crackers. 8. Bake in 375 degree oven for 45 minutes. |
