This is taken from a cookbook from Barbados. My old friend FBC has turned his nose up at this cookbook, even though he has never seen a copy, probably because it has not been approved by the food gurus of NYCity. Of course he lives in that culinary mecca, W. Lafayette, IN, so who am I to question his taste? He is missing out on recipes like this. You can also add a layer of cooked bacon slices if you wish. Ingredients:
1/2 breadfruit, peeled, cored, and sliced into 6 chunks |
1/4 cup butter |
2 onions, thinly sliced |
2 cups milk |
2 tablespoons flour |
1 cup cheddar cheese, grated |
nutmeg, grated, to taste |
salt & pepper, to taste |
Directions:
1. Preheat your oven to 375 degrees F. 2. Boil the breadfruit in lots of salted water until tender; this takes about 20 minutes. 3. Heat the butter in a saucepan. Add the onions & cook until golden. Remove the onions and set aside. 4. Add flour to same saucepan and cook,stirring for 1-2 minutes. Slowly add the milk, whisking until the mixture begins to thicken. Remove from the heat. 5. Add the grated cheese, nutmeg, salt, & pepper. 6. In a buttered casserole dish layer the breadfruit, onions, and cheese sauce, ending with the cheese sauce. 7. Bake for 25 minutes. |
