Scallop Stir-Fry With Black Bean and Stout Sauce |

I haven't tried this recipe yet...found in Skillet Meals. I love scallops and it sounded a little different. Ingredients:
1 (15 ounce) can black beans, rinsed, drained and chopped |
1/3 cup dark-colored beer |
2 tablespoons low sodium soy sauce |
2 tablespoons honey |
2 teaspoons hoisin sauce |
2 garlic cloves, minced |
1/2 teaspoon salt |
1/8 teaspoon red pepper flakes |
2 tablespoons olive oil |
1 medium red bell pepper, seeded and sliced into thin strips |
1 1/2 cups fresh snow peas |
1 1/2 cups thinly sliced carrots |
1 1/2 lbs sea scallops |
Directions:
1. Combine black beans, beer, soy sauce, honey, hoisin sauce, garlic, salt and red pepper flakes in blender or food processor; set aside. 2. Heat oil in large nonstick skillet over medium-high heat. Add red bell pepper, snow peas and carrots; cook and stir 3 minutes. Add scallops and black bean sauce; stir-fry 6-10 minutes or until scallops are done and mixture is heated through. |
