a great low-fat scampi to be served over whole-grain pasta or rice Ingredients:
1 pound scallops |
1 tbsp garlic, minced |
2 tbsp olive oil |
1 cup fat-free chicken broth |
1/4 cup lemon juice |
1 tbsp parsley |
1/8 tbsp black pepper |
Directions:
1. Place scallops under cold running water to thaw. 2. Heat olive oil in a saute' pan - add minced garlic and saute' until golden brown. 3. Add scallops and sear for 4 minutes. 4. Add chicken broth and lemon juice and simmer until only 1/4 of a cup remains. 5. Add pepper to taste and garnish with parsley flakes. |
