Scallops add a special flavor to this traditrional Southern holiday dish which can be used as a side dish or even a salad Ingredients:
1/2 lb bay scallops |
salt and pepper to taste |
2 tbs olive oil |
1 1/2 cups cooked long grain white rice |
1 cup fresh or frozen black eyed peas cooked |
1/2 cup cup chopped red onion |
1/2 cup chopped celery |
2 tbs fresh chopped parsley |
1 tsp creole seasoning |
Directions:
1. Pat scallops dry and season with salt and pepper 2. In a large skillet, heat olive oil and cook scallops just until opague, about 2 minutes per side. 3. Combine remaining ingrdients in a large bowl and add the scallops 4. Serve immediately |
