Nice quick scallop recipe, looks great Ingredients:
1 lb scallops, if large cut in half |
1/2 cup 2% low-fat milk |
2 tablespoons fresh lemon juice |
2 tablespoons butter |
salt |
pepper |
1/3 cup green onion, chopped |
1/4 cup dry breadcrumbs |
1/3 cup parmesan cheese, grated |
1 teaspoon thyme |
Directions:
1. Soak the scallops in milk for 10 minutes, drain& dry well. 2. Heat oven to 450 degrees F. 3. Put scallops in a baking dish just large enough to hold them in a single layer. 4. Sprinkle with lemon juice and dot with butter. 5. Season with salt& pepper. 6. Bake for apprx 5 minutes or until the scallops are opaque. 7. Meanwhile mix the crumbs, green onions, thyme and cheese together. 8. Sprinkle over the scallops broil for apprx 2 minutes or until the crumbs& cheese are golden. 9. Cool before serving. |
