Found this recipe on a package of vermicelli. Looks simple and delicious. Ingredients:
8 ounces vermicelli |
4 slices bacon, cut in 1/2 inch pieces |
1/2 cup green bell pepper, chopped |
1/3 cup green onion, cut in 1/2 pieces |
1 garlic clove, minced |
1/4 teaspoon crushed red pepper flakes |
12 ounces bay scallops (or shrimp) |
1 large tomato |
Directions:
1. Cook vermicelli as package directs drain. 2. In large skillet, over medium-high heat, cook bacon until crisp. Remove and set aside. Drain reserving 2 tablespoons of drippings. 3. Add bell pepper, green onions, garlic and crushed red pepper flakes. Cook 4 to 5 minutes or until vegetables are tender crisp, stirring occasionally. 4. Add scallops and cook 3 minutes or until done. Add tomato; heat through. 5. Toss with vermicelli and reserved bacon. 6. Makes 6 (1 cup) servings. |
