South beach phase 1 recipe Ingredients:
1 tbs smart balance |
1/2 cup sliced onion |
1/2 cup sliced zucchini |
1/2 cup sliced red bell pepper |
2 small plum tomatoes, diced |
1 tbs chopped fresh basil |
1/2 cup egg whites |
1/2 cup 1% cottage cheese |
1/4 cup fat-free evaporated milk |
3/4 oz shredded monterey jack cheese |
Directions:
1. saute veggies in ovenproof skillet in butter 2. blend egg, milk & cottage cheese in blender 3. add to veggies until bottom is set 4. place in broiler for 2-3 minutes then add cheese till it melts |
