Savoury Sausage and Egg Bake |

Ingredients:
1 1/2 tsp chopped fresh or 1/2 tsp dried oregano leaves |
1 1/2 tsp salt |
1 1/4c. original bisquick |
1 c. milk |
1 lb. bulk pork sausage |
1/2 tsp pepper |
1/4 lb. mushrooms |
12 eggs |
2 c. shredded mozzarella cheese |
2 medium tomatoes |
8 medium green onions with tops |
shortening to grease pan |
Directions:
1. Heat oven to 350 degrees F. Grease bottom ad sides of rectangular pan (13x9) with shortening. 2. Cook sausage in skillet over medium heat 8-10 minutes, until no longer pink. Place strainer over medium bowl. Spoon sausage into strainer to drain fat and discard fat. 3. Cut mushrooms into slices. Cut and discard tips of green onion (with the stringy end). Cut green onions into think slices, including some of the green part. Chop tomatoes. Layer sausage, mushrooms, onions, tomatoes and cheese in greased pan. 4. Beat Bisquick, milk, salt, pepper, oregano and eggs in large bowl with fork until well mixed. Pour over cheese. 5. Bake uncovered 30-35 minutes or until golden brown and filling is firm. 6. *To do ahead, cover and refrigerate up to 24 hours. Then bake uncovered 40-45 minutes until golden brown and filling is firm. |
