Savoury Salmon and Three Cheese Waffles |

The basic waffle recipe is from my mother, I believe its an edited version from the Joy of Cooking's waffle recipe. Its a flexible recipe, but savory waffles are always delicious, they're like sandwiches all in one! Especially when you bite into one and the cheese is gooey and they're salty from the smoked salmon. Ingredients:
1 3/4 cups flour |
1 tablespoon baking powder |
1 tablespoon sugar |
1 teaspoon salt |
1/2 teaspoon old bay seasoning |
3 eggs |
1 cup butter |
1 1/2 cups milk |
2 -3 tablespoons ricotta cheese |
4 slices smoked salmon |
1/2 cup gruyere |
1/3 cup colby-monterey jack cheese |
Directions:
1. Turn on your waffle iron so it gets hot in preparation for your waffles. I use pam oil spray to coat the iron between each waffles but butter or anything works as well. 2. Melt the butter completely, dice the salmon, and chop/grate the cheese. You can really use any kind of cheese you prefer, but this is just the kind of cheese I usually use and is readily available. 3. Sift and whisk the dry ingredients in a large bowl. 4. Blend the wet ingredients in a medium sized bowl. 5. Slowly pour the wet ingredients into the dry and whisk with a few strokes, don’t over beat. When fully blended add the cheeses and salmon. |
