This dish is a sweet, delightful side dish. Even works as a vegetarian mail meal. Ingredients:
2 eggs |
1 cup cream (250 ml) |
1 cup sugar (250 ml) |
5 ml salt |
1 cup milk (250 ml) |
115g melted butter |
1 cup flour (250 ml) |
2 teaspoons baking powder |
1 teaspoon cinnamon |
750 ml cooked pumpkin, drain well ( 3 cups pumpkin, not butternut) |
Directions:
1. Mix eggs and cream together, then the sugar, salt and milk. 2. Stir in melted butter, then flour and baking powder. 3. Lastly add the pumpkin and cinnamon and stir. 4. Bake in a round tart dish for one hour at 180 degrees celcius. |
