A perfect side side for this time of year with the bounty of fresh vegetables available. Ingredients:
1 large onion, sliced |
1 garlic clove, minced |
1/4 cup parsley, minced |
2 teaspoons salt |
1/4 teaspoon each pepper,ground thyme and ground sage |
2 tablespoons oil |
1 pound green or wax beans, cut |
3 large tomatoes, diced |
2 cups diced yellow (or green) squash |
Directions:
1. Cook onion, garlic, parsley and seasonings in oil in large 2. skillet for about 3 minutes. 3. Add remaining ingredients. Add water to half the depth of mixture. 4. Cover and simmer 20 minutes or until beans are tender. 5. 4-6 servings |
