A yummy tomato soup. Can substitute canned tomatoes with 6 fresh tomatoes. Ingredients:
1 1/2 cups onions, chopped |
3 minced garlic cloves |
1/2 teaspoon black pepper |
2 tablespoons oil |
48 ounces whole tomatoes, chopped |
1/4 teaspoon dill weed (or 1 tbs fresh) |
1 tablespoon honey |
salt |
1 tablespoon sour cream |
1 cup sour cream |
2 scallions, chopped |
Directions:
1. Saute onion, garlic, and pepper in the oil until onion is translucent. Stir in tomatoes, dill, and honey. Salt to taste. 2. Cover and simmer at least 45 minutes. 3. Five minutes before serving, wisk in one tablespoon of sour cream. 4. Serve topped with a dollop of sour cream and a sprinkling of scallions (and parsley if you have some.). |
