Squash baked with butter, maple and cinnamon is great but it gets old. This more savory recipe is different but still has the warm, comfortable flavors of squash. Perfect for a chilly day. Ingredients:
yellow squash (hubbard or acorn are great for this)-(one whole acorn or approx 1 lb of the hubbard) (cut into 1 inch cubes) |
1/2 yellow onion (diced) |
1 tsp buttter |
worcestershire sauce |
thyme (to taste) |
kosher salt |
3 tbs water (or stock) |
Directions:
1. Over a medium-low heat add the onions, butter, a pinch of salt, the squash and the water (or stock) and cover for 10 minutes. 2. Remove the cover, turn the heat up to medium and add the Worcestershire and Thyme 3. Let the liquid evaporate and when your squash is tender, its ready! 4. Enjoy |
