Yummy. I make these when I have leftover chicken and fresh tomatoes on hand. I like it as a stand-alone main dish but my husbands like these served with grilled porkchops. Fabulous and oh so tasty
Ingredients:
6 firm medium tomatoes
1-1/2 cups spoon size shredded wheat
1 cup cut up cooked chicken
1/2 cup grated parmesan cheese reserving 1 tablespoon
3 tablespoons butter melted
1/2 cup chopped celery
2 tablespoons minced onion
1/2 teaspoon salt
1/2 teaspoon basil leaves
1/4 teaspoon ground black pepper
Directions:
1. Cut a thin slice from the top of tomatoes. 2. Cut out hard centers and discard. 3. With a spoon scrape out pulp and reserve then turn tomatoes upside down to drain. 4. Combine tomato pulp with remaining ingredients and blend well. 5. Pile into tomatoes. 6. Place in shallow baking dish. 7. Sprinkle with reserved Parmesan cheese. 8. Add enough water to cover bottom of dish. 9. Bake at 350 for 30 minutes.
