Found some rambutans at a local Asian Market -Trans- and picked some up. Needed some recipes and this one was found on line. Ingredients:
2 garlic cloves |
10 ml crushed coriander root |
vegetable oil (for frying) |
125 g ground pork |
50 ml coarse ground roasted peanuts |
20 ml soy sauce |
60 ml brown sugar |
black pepper |
1 chopped de-seeded chili pepper |
30 ml fresh coriander leaves or 30 ml fresh parsley |
500 ml peeled and de-seeded rambutans |
Directions:
1. Fry crushed garlic and coriander roots in oil. When garlic is golden, add all other ingredients except the fruit (rambutans). Cook and stir until the mixture is browned and fairly dry. Add fruit and cook, mixing well, for 2 minutes. 2. Serve as an entree, hors-d'oeuvre, or as a main course with rice. |
