Do not throw out mushrooms that are just past peak freshness. Why not make them into some yummy stuffed mushrooms instead. This is fast and yummy recipe all your guests will love! Ingredients:
18 large mushrooms |
6 oz. mild or spicy turkey sausage |
3 tablespoons of seasoned bread crumbs |
1/4 cup parmesan cheese |
1/4 cup mozzarella cheese |
2 teaspoons of dried parsley |
Directions:
1. Preheat oven to 375°F. Grease a large baking sheet. 2. Remove and chop mushroom stems, chop in food processor 3. Heat a medium skillet over medium-high heat; add sausage. 4. Cook until browned and crumbly, about 5 minutes; drain. 5. Stir mushroom stems, crumbs and 1/4 cup Parmesan into skillet. 6. Remove skillet from heat. 7. Spoon sausage mixture into mushroom caps. 8. Arrange stuffed mushrooms on prepared baking sheet. 9. Top mushrooms with mozzarella. 10. Bake until stuffing is hot, about 15 minutes. 11. Place on a serving platter. 12. Garnish with parsley. |
