Savory Stuffed French Toast |

The Jockey Club french toast was made with english muffins instead of bread and we were playing around with bits of this and that; this is the result. Good way to jump start any day. Ingredients:
6 oz. of softened cream cheese |
4 oz. of sharp cheddar cheese grated |
1/4 cup of diced cooked ham (just used some lunch meat) |
4-6 chopped black olives |
1-2 green onions, minced |
1/4 cup of canned green chilies chopped |
1 six pack of sturdy whole wheat english muffins |
4 eggs |
3/4 cup of half and half |
several shakes of hot sauce |
generous pinch of salt |
several grinds of black pepper |
unsalted butter as needed for the pan |

sour cream |
Directions:
1. Mix cheeses together, adding the ham, onion, chilies, olives. 2. Split the muffins and spread generously with the filling. 3. Sandwich back together. 4. Beat eggs with half and half, season with hot sauce, salt and pepper. 5. Melt butter in large skillet til foaming. 6. Dip English Muffins in the batter, flipping once. 7. Grill in the foaming butter until golden brown on each side. 8. Serve with a dollop of salsa and sour cream. 9. I guess we could have called it English French Tex Mex Toast if we were creative. |
