1/4 cup chopped onion |
2 tbsp. butter |
1 package(10 ounces) frozen chopped spinach, thawed and well drained |
1/4 to 1/2 tsp. salt |
1/4 tsp. ground nutmeg |
1 cup cottage cheese |
1/2 cup light cream |
1/4 cup grated parmesan cheese |
3 eggs, lightly beaten |
1 unbaked pastry shell9 9 inches) |
Directions:
1. In a skillet, saute onion in butter. 2. Remove from the heat; stir in spinach, salt and nutmeg. 3. In a bowl, combine cottage cheese, cream, Parmesan cheese and eggs: mix well. Stir in spinach mixture. 4. Pour into pie shell. 5. Bake at 350* for 45-50 minutes or until knife comes out clean. 6. Let stand 5 minutes before cutting. |
