Ingredients:
2 pounds yellow squash, cleaned and sliced |
1 large onion, chopped |
1 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup bacon drippings |
Directions:
1. Combine squash and onion in a medium saucepan with boiling salted water to cover. Cook 10 minutes or until squash is tender; drain well. 2. Mash squash and onion; drain once again. Add salt and pepper; stir well. 3. Heat bacon drippings in a large skillet. Add mashed squash mixture. Cook over medium heat, stirring occasionally, 20 minutes or until mixture is browned. |
