Savory Small Onions Parmesan Walnut Crumble |

This is a recipe that I created to compliment pork and beef. It is loved by our family, and it always gets rave reviews from guests. Hope you enjoy! Ingredients:
2 packages of small, white boiler onions |
unsalted butter (about 3/4 stick, more or less) |
a little olive oil (just enough to keep the butter from burning) |
parmesan cheese, freshly grated |
walnuts, chopped coarsely |
4 slices whole wheat bread, toasted and coarsely crumbled |
couple of pinches thyme |
a little white pepper |
a little black pepper |
a little cayenne pepper for sprinkling on top |
Directions:
1. Toast whole wheat bread crumbs, crumble, set aside 2. Place onions in boiling water for about 30 seconds, or as directed 3. on package (this loosens the skin and makes peeling easier) 4. Remove from boiling water with a slotted spoon 5. When cool enough to handle, cut off both ends, peel 6. In a skillet, on medium high heat, melt butter and olive oil 7. When hot, add onions 8. Let them *sizzle* until slightly browned on one side, then flip them over and let them continue to sizzle 9. May have to turn heat down a little 10. Add a lid, just keep them hot enough and *sizzling*, rolling them over and over, frequently, so they will not get too brown 11. When they can be pierced with a fork, remove the lid 12. Add the walnuts, thyme, white and black pepper 13. (may have to add a little more butter or olive oil) 14. Continue to sizzle until walnuts are coated pretty well 15. Place onions, walnuts in casserole dish*, or serving dish 16. Add toasted bread crumbs to skillet for a few seconds, just to warm 17. Then sprinkle crumbs evenly over onions 18. Then sprinkle evenly with Parmesan cheese 19. Then sprinkle with cayenne pepper 20. *If using a casserole dish, may run under the broiler, watching closely, just to slightly brown 21. This is a great dish, and you can adjust it by adding crumbled bacon, pecans, nutmeg, different spices, etc. |
